Along with grazing his own cattle, this has given Paul a keen eye for what makes great meat. With very few livestock markets in operation, nowadays Paul visits the local farmers and small abattoirs in our area to find out traditional breeds and the very best meat.
The beef at Humphrey’s Butchers is hung and dry-aged, it is this traditional way of maturing meat, which gives it a fabulous flavour.
