After 25 years in the Butchery business, winning Butcher of the year twice and studying the meat trade at college for 3 years gaining a degree in Meat management, I bought a Sausage Cart on ebay one day while on my break at work with the idea of selling the Sausages we make at local events.

Everyone thought I was mad and told me so, including my parents but I had seen them in operation in Germany and my first employer had one outside his butches shop and I knew it was popular.
Work for Myself

I always wanted to work for myself and not being afraid of hard work or taking risks – I thought this was a good way to begin without too much outlay. I repainted it and really tidied it up to look very smart and after buying a van and trailer I was ready to begin cooking some delicious Free Range local pork Sausages.

My first event was at a farm where we bought our chickens from to sell in the butchers and they were having an open farm day on a Sunday in 2010 – the deal was I had to do a Sausage making a demo for the visitors in exchange for a free pitch – we were busy and sold out pretty quickly !!

My next event was the Nowton Fair in Bury and I have never seen queues like it – we were packed out all day and my third and final one of that year was the Bury Christmas Market and that was packed too – selling locally at a good price and a service with a smile was the key to the success.

We gradually over the years built up relationships with event organisers and have established some good events whereby we return year after year and we are now to be found in the town regularly on Saturdays.
Marmalade & Red Onion

I no longer work in a butchers or make the sausages anymore so I always aim to source the best sausages available at the time, from a variety of reputable butchers in town.

I only use local Suffolk Free Range Pork and have been able to devise some interesting flavours to compliment events we are attending. For the Beer festival, we now sell a Sausage containing real ale and for the Queens Birthday we created a Sovereign Sausage which contains Marmalade and Red Onion and this has now won an award at a Sausage competition. We wore Union Jack aprons and decorated the Cart with Union Flags for this event.

We are registered with West Suffolk Council and comply with all the Food Safety requirements and we pride ourselves in temperature checking every Sausage before it is served to the customer, something we are often complimented on.

The Sausage Cart has opened up a new way of life for us by going to some lovely places and meeting some really nice people and the greatest pleasure I get is when a customer comes back and tells us “that was the best Sausage I’ve ever tasted” – it makes it all worthwhile to me knowing we do a good service and are appreciated.

I absolutely love my job working on the Sausage Cart and not only can our customers buy a quality Sausage but they can have a nice friendly chat too.
